Cheesy Scrambled Eggs + Vegetables

INGREDIENTS
  • 2 big handfuls of chopped mushrooms, onion and spinach

  • 2 eggs

  • 40gm of cheese (ie. Tasty cheese or goats cheese)

  • 2 tbls of skim, soy milk or almond milk

  • 1 tsp of rice bran oil 

 

  • Silverbeet

  • Spinach

  • Garlic

  • Sundried tomatoes

  • Pumpkin Seeds

  • Fetta

METHOD

EGGS:

  1. Heat oil in a pan, gently sauté the onion, mushrooms and spinach

  2. Beat eggs, milk and cheese together and pour into pan

  3. Stir every so often and serve 

 

VEGIES:

  1. Cook of garlic until soft, then add silver beet and spinach and cook until soft (this wont take long)

  2. add to pate and top with sundried tomatoes, pumpkin seeds and fetta
