Eggs Florentine 

INGREDIENTS

    Handfuls fresh spinach leaves

  • 2 tablespoons parmesan cheese, freshly grated

  • Sea salt and pepper to taste

  • 1 tablespoon white vinegar

  • 2 eggs 

METHOD

 

 

 

  1. Microwave spinach in a microwave safe bowl or steam until wilted (3 to 5 minutes).

  2. Sprinkle with parmesan cheese and season to taste.

  3. Chop into bite size pieces and place on a plate.

  4. Bring pan of water to boil, then reduce heat to simmering point.

  5. Add vinegar and stir with wooden spoon to create a whirl pool.

  6. Break an egg into the centre, turn off the heat and leave covered until set (3 to 4 minutes).

  7. Repeat with second egg.

  8. Place eggs on spinach and serve.
