    LEMON + POPPY SEED MUFFIN

    • 3/4 cup almond meal

    • 1/4 cup flaxseed meal 

    • 1/3 stevia

    • 1 tsp baking powder

    • 2 tbsp poppy Seeds

    • 1/4 cup butter, melted

    • 1/4 cup cream

    • 3 large eggs

    • zest of 2 lemons

    • 3 tbsp of lemon juice

    • 1 tsp of vanilla extract

    •  

       

    1. Pre-heat oven to 180deg.

    2. In a bowl mix almond meal, flaxseed meal, stevia + poppy seeds with a fork until combined.

    3. Stir in melted butter, eggs + cream, mix until a smooth batter forms.

    4. Once smooth, add the baking powder, vanilla extract, lemon zest + juice.

    5. Mix well until combined.

    6. Separate into 12 patty pans, bake for 18-20 mins or until golden.
