Smoked Salmon Omelette

INGREDIENTS

 

 

 

  • Eggs

  • 1 slice of smoked salmon

  • 1/2 handful tomato, sliced

  • 1 tablespoon dill, diced fresh or dried

  • 1 tablespoon sour cream (low fat)

  • Cracked pepper and sea salt to taste

  • 1 tablespoon olive oil 

METHOD

 

 

 

  1. Preheat the grill, whisk eggs and dill,

  2. Add salt and pepper to taste.

  3. Pour mixture into oiled fry pan (medium heat) to form a thin layer.

  4. Cook for one minute in the pan and one minute under the grill.

  5. Once cooked place the omelette on a plate and place salmon, sour cream and slice tomato on one half of he omelette, garnish filling with dill, and fold to form a triangle.
