MEXICAN FAJITAS

METHOD

FAJITAS MIX: 1 tsp of chilli powder, cumin, paprika and 1/2 tsp of dried oregano with 1 tsp of sea salt and 1/4 tsp of freshly ground pepper. Combine together and use to season some beef strips. Chop 1 red and green capsicum and a red onion, add to the beef. Stir fry until cooked.

SALSA: chop 2 tomatoes but discard the soft insides and seeds. Add 1 tsp of minced garlic, 2 tsp of finely chopped red onion and top with some fresh parsley. 


GUACAMOLE: Peel 1 avocado and smash it up, mix in 1/2 tsp of minced garlic, 2 tsp of finely chopped red onion or spring onion, herbamare or salt to taste and squeeze the juice of half a lime. Layer all condiments on your wraps, I've also used some Greek plain yogurt or you could use sour cream, and top with fresh coriander!
